I want to keep my new 1986 928 as close to stock as possible but I do not like the skinny tires on the back. Want to beef up a bit and was considering getting 1987 flat disc 8" wheel however, it has an offset of 52.3 instead of 65 offset currently on the car with 7" wheels. This means the wheel will stick out 1" more than before. Is there any issues with rubbing.or sticking out too much.

There can be, some are not too concerned with the lower offsets to get the right look. Others do not like to test the designers decisions...that much 
Just do a search if you do not get many responses,,, it is indeed well discussed here and elsewhere
If you need 65 offsets, you can get the Manhole covers like I have (16 inch, on my 83) or maybe some are on 84's, or on older model years. You will likely not find any that high again until the GTS model and not many of those are made,,, and they are 17 in, I keep an eye out for those myself
After market? Good luck,,, I not yet found offsets that high, unless you have the wheel built,,,, quite expensive.
